fall harvest salad

ingredients:

  • 2 cups spinach - chopped

  • 2 cups romaine - chopped

  • 1 sweet potato - peels & diced

  • 1 apple - diced

  • 1/2 cup red onion - diced

  • 1 cup goat cheese

  • 1/2 cup roasted pumpkin seeds

  • 1/2 cup craisins

dressing:

  • 1/4 cup olive oil

  • 2 tbsp apple cider vinegar

  • 1 tbsp tahini

  • 1 tbsp maple syrup

  • 1 tsp dijon mustard

  • salt + pepper

instructions:

  • preheat oven to 450

  • peel & dice sweet potato. toss with olive oil, salt, and pepper. roast for 25 minutes, flipping half way through

  • prepare dressing by combining ingredients into a jar and shaking well. set aside

  • in a large bowl, add 2 cups chopped spinach and 2 cups chopped romaine

  • add diced apple, diced onion, goat cheese, craisins, and pumpkin seeds

  • once sweet potato is finished, add to the bowl

  • drizzle with dressings & enjoy
