easy same-day focaccia bread

ingredients:

  • 2 cups water

  • 1-2 tbsp rosemary

  • 4 cups flour

  • 2 tsp instant yeast

  • 2 tsp salt

instructions:

  • boil 2 cups of water

  • put 1-2 tbsp of rosemary in a bowl or the empty measuring cup

  • pour lightly boiling water into the container with the rosemary

  • let rosemary steep in water until it reaches room temperature

  • in a large bowl, whisk flour, yeast, and salt

  • strain the rosemary water and pour water into the large bowl of dry ingredients

  • mix until it becomes a large ball of dough

  • lightly coat the ball with olive oil.

  • cover bowl with a damp kitchen towel and let it sit for 1.5 - 2 hours

  • grease your glass pan with butter (you can use plant-based butter here too!)

  • deflate the dough and transfer dough to the glass pan

  • allow dough to rise again, usually about 30 minutes

  • preheat your oven to 425°

  • dimple the dough (it helps if you put olive oil on your hands first)

  • add a generous amount of salt to the top. option to sprinkle more rosemary or other herbs on top

  • bake dough at 425° for 25-30 minutes

  • remove from oven and transfer to cooling rack. allow 10 minutes to cool - enjoy!
