easy same-day focaccia bread
ingredients:
2 cups water
1-2 tbsp rosemary
4 cups flour
2 tsp instant yeast
2 tsp salt
instructions:
boil 2 cups of water
put 1-2 tbsp of rosemary in a bowl or the empty measuring cup
pour lightly boiling water into the container with the rosemary
let rosemary steep in water until it reaches room temperature
in a large bowl, whisk flour, yeast, and salt
strain the rosemary water and pour water into the large bowl of dry ingredients
mix until it becomes a large ball of dough
lightly coat the ball with olive oil.
cover bowl with a damp kitchen towel and let it sit for 1.5 - 2 hours
grease your glass pan with butter (you can use plant-based butter here too!)
deflate the dough and transfer dough to the glass pan
allow dough to rise again, usually about 30 minutes
preheat your oven to 425°
dimple the dough (it helps if you put olive oil on your hands first)
add a generous amount of salt to the top. option to sprinkle more rosemary or other herbs on top
bake dough at 425° for 25-30 minutes
remove from oven and transfer to cooling rack. allow 10 minutes to cool - enjoy!
