fall harvest salad
ingredients:
2 cups spinach - chopped
2 cups romaine - chopped
1 sweet potato - peels & diced
1 apple - diced
1/2 cup red onion - diced
1 cup goat cheese
1/2 cup roasted pumpkin seeds
1/2 cup craisins
dressing:
1/4 cup olive oil
2 tbsp apple cider vinegar
1 tbsp tahini
1 tbsp maple syrup
1 tsp dijon mustard
salt + pepper
instructions:
preheat oven to 450
peel & dice sweet potato. toss with olive oil, salt, and pepper. roast for 25 minutes, flipping half way through
prepare dressing by combining ingredients into a jar and shaking well. set aside
in a large bowl, add 2 cups chopped spinach and 2 cups chopped romaine
add diced apple, diced onion, goat cheese, craisins, and pumpkin seeds
once sweet potato is finished, add to the bowl
drizzle with dressings & enjoy
