lemon orzo soup
ingredients:
1-2 tbsp olive oil
1 tbsp butter
1/2 onion, diced
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
2 tbsp flour
6 cups vegetable broth
1 tsp Italian seasoning
1 cup of orzo
1/4 cup parmesan
juice of 1/2 lemon
instructions:
heat oil + butter over medium heat
add onion, celery, and carrot, sauté for 5-7 minutes
add garlic, sauté for 1 minute
add flour and stir to coat the vegetables
add broth and Italian seasoning, bring to a boil
add orzo and cook for 10 minutes
remove from heat
add parmesan and lemon juice
allow soup to thicken for 15 minutes & enjoy!
