vegetable sushi

ingredients:

  • 2 cups sushi rice

  • 2 medium sized carrots

  • 1 cucmber

  • 1 avocado

  • nori sheets

  • *optional - sriracha, soy sauce, spicy mayo

instructions:

  • prepare sushi rice in your preferred method

    this is the hardest part! you can use a pot like I did, a rice cooker, or an instant pot. there is some trial and error here, but find your perfect recipe

  • cut vegetables into 1/4 inch strips

  • blanch the carrots by adding to boiling water for 2 minutes

  • prepare your sushi mat - i like to cover mine with saran wrap. to make sure the rice doesn’t stick to the mat, i rub some of the avocado on the saran wrap too (all those years working in sushi restaurants are paying off!)

  • place a nori sheet on the sushi mat

  • when sushi rice cools, add a big spoonful to the nori sheet. spread evenly

  • add in your ingredients (sometimes i add some cream cheese in here too)

  • roll the sushi, making sure to press and squeeze gently as you go

  • wipe a sharp knife with a wet towel and carefully cut the roll

  • top with sriracha if you like and enjoy!
